| Hands down the best hotpot in Beijing, especially if you like your hotpot HOT. This is the most famous restuarant in Chengdu. In fact, I have been to the Chengdu branch which was regarded by locals as the best Chengdu hotpot place. Last winter, I had a 3 hr layover on a flight in Chengdu and I hopped into a taxi and asked the driver to take me to the best restaurant in Chengdu and this is where I ended up. A year later, in Beijing I was taken to a business dinner and had long forgotten the name of this restaurant in Chengdu. But I noticed the unmistakable high class signature square hotpots in both the Beijing and Chengdu branches, as well as a small dried seahorse placed in the soup! This restaurant offers the spicy and mild broths side by side and the lamb is one of the specialties (a MUST ORDER, its very tender and has amazing flavor). Unlike Northern Chinese hotpot, this comes in thick, flavorful, tenderized slices, not the wafer thin slices you most often see in Beijing. Besides a great variety of meat and vegetables available for you to boil at your table, the side sauces are well done. The Beijing branch is a bit hard to find, its across the street from Jianwai Soho on the other side of 3rd ring road along the dirty little river. Don't worry though, the decor inside is upscale. A fine place to bring business customers for good food.
